Dinner Recipe of the Day: One-Skillet Cheesy Ground Chicken Pasta
Start by heating a tablespoon of olive oil in a large skillet over medium-high heat. Add a pound of ground chicken and cook until it's no longer pink. Toss in a cup of chopped red onion, a cup of halved grape tomatoes, two teaspoons of dried Italian seasoning, and a quarter teaspoon of salt, cooking until the onions soften. Stir in eight ounces of whole-wheat penne, two cups of unsalted chicken broth, a cup of marinara sauce, and half a cup of heavy cream. Bring to a boil, then reduce heat and let it simmer until the pasta is al dente. Fold in five ounces of fresh baby spinach and half a cup of chopped fresh basil, cooking until the spinach wilts.
